Fixins and Feasts

The topic of food and cooking definitely needs its own tab

Both Ben and I love food and love to cook! Moving to Abaco means more seafood, but less convenience... You can't plan on a menu or recipe and then hit Maxwell's (the largest grocery store in the Bahamas, similar to a Publix minus some major items) because they might not have what you need. Flexibility in your menu planning is a necessity!
So here you will find some our favorite meals and proud culinary accomplishments~ we prefer to cook and eat in because WE feel we have some of the best fixins and feasts in Marsh Harbour.  Although, you can't beat some of the local fare out there...which we will also share with you.

Pizza Night!


I have yet to try the Pizza here in Marsh Harbour...but from what I hear, it ain't no Antico (Atlanta). So, one night Ben and I made this delicious Pizza! We used Pillsbury Pizza Dough (thin crust) but plan on making some fresh dough next time.

2.5.12  Superbowl Sunday! 

We were lucky to even get NBC on this day and that the picture wasn't so bad! We decided to do it up proper, so Ben made some Buffalo Chicken Wings, I made some homemade blue cheese dressing, and we both made the Mexican Totchos with black beans, mushroom, zucchini, onions, salsa, sour cream and homemade guacamole. (Nachos but with tater tots instead of chips!)  Super duper unhealthy but definitely lovely and delicious!

Thank goodness for neighbors that fish successfully! Some vacationing neighbors brought over some Mahi-Mahi caught that day for us! So sweet~

MY FIRST LOBSTER PIE


What to do with all this yummy Lobster tail meat? I decided to try to make a Lobster Pie because Ben often talks about Guinness Meat Pies, Chicken Pot Pies etc. as being wonderful to eat... So why not Lobster, Veggies, Butter and Wine?? It was fun to make and all went well, except it was a little runny. I would try to choose veggies that don't release as much water: I used Kale, Mushrooms, Broccoli, Onions and Carrots.

We often do fish tacos, but this night we decided to do chicken and veggie fajitas because we had to eat up some food before leaving town. I decided to try fresh tortillas because 1- we didn't want to go to the store 2- I feel I need to know how due to my heritage 3- They are so much tastier!

Yes, We Eat MEAT!

The grocery store here actually has some great meat selections. Our favorite is the gluttonous RibEye. The thickest ones they have of course. and as I mentioned before...Ben is excellent at the Grill! I made these delicious Parmesan potato stacks, a recipe that I got from Pinterest. They are baked in muffin/cupcake pans and look super cute (and taste divine!)
